Finca Churupampa Organic

A nicely done, well-balanced cup

Love this coffee! I also really appreciate having an organic option. Made a cup of this for a coffee snob last weekend and it passed their test with flying colors!

Delivered while still warm, the 12 ounce bag of Finca Churupampa coffee warmed my house with the smell of freshly roasted coffee. The next morning, when the coffee was at its peak, I brewed a cup using my Hario V60 pour over. A 17:1 ratio at 187 degrees brought out dark cherry with a dark undertones. Increasing the brew temperature brought more acidity and more complex flavors. Over 197, I did not find the payback of more flavor for more acidity. During next week, the coffee demanded more attention to the brew method as it mellowed. There was a great reward of a smooth, toffee flavor when dialed in using the Hario V60, and a more bitter, cherry flavor when brewed quickly in an Aeropress. My recommendation — brew within 2 to 10 days after roasting for a cup that is perfect for an afternoon pickup.

Great coffee for those who also enjoy African varieties. Very complex, flavors flex depending on brew style. Crema was beautiful for espresso. Really loved it in Aeropress & V60.
